Blue Cheese Deviled Eggs


With the Super Bowl being 3-weeks away, it's time to start thinking of food ideas! Finger foods are a must! It seems like everyone in our family LOVES blue cheese. These were such a hit over the holidays, that we have  to have this on our Super Bowl menu! Hopefully you enjoy these as much as we do!

Ingredients: 
- 12 eggs
- 6-8 slices of bacon
- 3/4 cup of blue cheese crumbles
- 3/4 cup of mayonaise
- 1 teaspoon of Dijon mustard
- 1 large jalapeno (optional) 

Step 1: Bring water to a rapid boil. Drop eggs in carefully and boil for 20 minutes.
Step 2: Cook bacon until crispy. Once done, let drain and cool on a paper towel.
Step 3: Once eggs are done, run cold water over eggs to cool and set aside. Once completely cooled, peel and rinse.

Step 4: Cut eggs in half, lengthwise.
Step 5: In a mixing bowl, carefully remove the yolks.
Step 6: Add mayo, Dijon mustard and blue cheese crumbles to the egg yolks and mix well.
Step 7: Chop bacon (except 1-2 slices, which should be cut into small pieces) and thinly slice the jalapeno (if you choose to use).
Step 8: Add the chopped bacon to the yolk mixture. Stir well.
Step 9: Scoop yolk mixture with a Tablespoon and carefully place in egg white halves.
Step 10: Garnish with a jalapeno slice and a bacon piece.
